Production Details The house-wide process described by the official importer comprises maturation entirely on the lees, gentle bâtonnage several times per month according to the vintage, and no racking during maturation. The naturally cool, humid cellar prolongs malolactic fermentation; barrels are then tasted several times monthly. Bottling is performed manually by gravity after a full moon, without fining, filtration, or sulfur addition at bottling. The exact 2015 Régnié evidence found is a 3 L Horizon 50 Ans release.
