Production Details Manual harvest and gentle pressing. Native-yeast fermentation takes place in stainless steel at 15°C, then 20°C to finish fermentation; the producer-submitted form records completed alcoholic and malolactic fermentations. Finished-wine residual sugar is below 1 g/L. The wine spends six months on fine lees—described in the producer form as winter and spring until bottling—then receives extensive bottle aging before release. Mataret has been organically farmed and certified since 2019 and is described as practicing biodynamic. The slope descriptions have different bases or contexts: the producer form reports a maximum 40% gradient for the 2021 parcel, while the importer describes the wider Mataret site as reaching up to 45 degrees.
