Production Details The 2022 fruit was 75% destemmed and cold-macerated for 4–5 days, then fermented in stainless steel at 30°C for 12–15 days. Free-run and gently pressed juices were combined in stainless steel before being gravity-fed into French-oak barrels, all new. Malolactic fermentation was followed by 18–22 months of maturation and unfiltered bottling. The release sheet describes a gentle slope at 260–280 m, vines aged 40–60 years, severe spring debudding, a summer green harvest, and an approximate yield of 40 hL/ha.
