Production Details At the Wine Spectator barrel tasting, Lucien Le Moine's 2018 cuvees were still resting in barrel, unracked and without added sulfur at that stage. The producer described interrupting malolactic conversion to prolong fermentation and maturation and retaining approximately 6 litres of lees in each barrel.
