Production Details Hand-picked bunches underwent semi-carbonic fermentation and were gently pressed after 12 days at low pressure; the wine then matured approximately six months in concrete and three months in bottle before release. Supervin recommends 14–17°C and lists an unspecified-basis “acid content” of 2 g/L, while 1jour1vin recommends 14–16°C. The importer’s 2022 estate profile says fermentation was spontaneous and exclusively in cement, sulfur followed malolactic fermentation, and the estate harvest began on 26 August; that date is not established as the Poncié parcel’s complete harvest date.
Tasting Notes Black cherries, summer flowers, violets, red plums and currants; ripe red and purple stone fruit, pronounced minerality, ripe acidity, fine or velvety tannins, and a long elegant finish.
