Production Details The three-hectare vineyard was planted at 5,500 vines/ha. Vineyard work included traditional ploughing on the limestone-and-gravel plateau, grass between rows on sandy plots, rigorous pruning, July leaf thinning and an August green harvest. Grapes were harvested manually in small baskets, sorted in the vineyard and on a vibrating table, and vinified plot by plot. The entire vinification lasted four weeks in small 400 L oak barrels, including five days of whole-bunch cold pre-fermentation maceration at 12°C followed by a hot post-fermentation maceration of unstated duration. Malolactic fermentation occurred in 100% new fine-grain French oak, followed by 12 months of maturation; the wine was racked off its lees after six months. Reported annual production was 1,300 cases.
