Production Details Reasoned vineyard protection with intervention only when required; primarily cordon pruning, fruit thinning and high trellising. Harvesting and pressing were performed at night to avoid oxidation and limit sulphur use, followed by light settling and slow, regular fermentation with Chardonnay-compatible Burgundian yeasts. The wine aged on fine lees for 4–5 months, principally in stainless steel, with 7.5% aged in wood. Vegetable fining preceded cold stabilization, and 20% of the alcohol was removed after maturation using a technique intended to preserve aromatic potential.
Tasting Notes Refreshing and delicious, with a light bouquet dominated by white-fleshed fruit and floral notes.
