Production Details Confidential production of one barrel. Vinification and maturation lasted 18–22 months: 11 months of maturation in barrels and glass carboys, followed by the remaining period in stainless-steel tanks. Bottled with little or no filtration.
Food Pairing River fish cooked in foil; sole with beurre blanc; pan-fried scallops; fresh or semi-dry Mâconnais goat cheeses.
