Tasting Notes Bright pale gold with a green glint; fresh limestone, lemon, grapefruit and clementine, followed by crisp pear, apple and white peach, honeysuckle, jasmine, orchard flowers and fresh herbs. Textured, compact and savory, with citrus, white fruit, pervasive salinity, ginger, white pepper and cardamom; long, precise finish.
Food Pairing Steamed or tempura langoustines; citrus scallop carpaccio; later, roast John Dory, warm lobster with spring vegetables, or Bresse poultry with lobster.

Production Details The producer describes 2019 as warm but less extreme than 2018, with lower yields and wines marked by freshness, aromatic brightness and fine texture. The parcel’s approximately 23% grade provides strong drainage. CAVE S.A. states that vinification and maturation lasted 18–22 months, including 11 months entirely in barrels and the remainder in stainless steel; bottling involved light or no filtration.
Tasting Notes Bright pale gold with a green glint; warm waffle, camphor, incense, wet stone, wax, pear and white peach, followed by herbal and floral notes, yellow fruit, lime, almond and hazelnut. Juicy citrus and pear on the palate, with nutmeg, liquorice and white pepper; very long lemon-and-maritime finish.
Food Pairing Trout with almonds; sole with Comté; roast turbot with wild mushrooms; or langoustine ravioli with citrus and coconut-milk emulsion.
