Production Details Current official release option: Utopia 2021. The wine comes from the 0.4-ha Les Marnes plot and is made by the producer's natural, input-free method. It matures for 12 months in demi-muids and barrels, including the estate's oldest 10–15-year-old barrels, followed by 6 months in stainless steel. A specialist vendor additionally reports manual harvesting, slow low-temperature fermentation with indigenous yeast, no fining, no filtration and 0 grams of sulfite; the sulfite statement describes the vendor's reported cellar practice and is not treated as a finished-wine sulfites analysis.
Tasting Notes Oxidative nuance, spice and candied quince, with a powerful palate and a saline, almost iodine-like finish.
