Fruit was selected in the vineyard and winery; 5% whole grapes were used, with fruit uncrushed and gravity-vatted. Cold pre-fermentation maceration lasted 5 days at 12–15°C, followed by one light pumping-over per day through the end of vatting. The wine matured for 16 months in oak barrels. Magnums and jeroboams were bottled on 6 December 2021; the standard-bottle year is truncated in the sheet as “December 7th 202,” so no standard-bottle date is proposed.
