Production Details The 2016 vintage dossier records that none of the 2016 wines had been racked at Stephen Tanzer’s January 2018 visit and that they were very low in sulfur. The stated cellar method was full-lees maturation without racking, gentle bâtonnage a few times monthly as adjusted for the vintage, delayed malolactic fermentation in a naturally cool and humid cellar, and hand bottling by gravity after a full moon, without fining or filtration.
Tasting Notes Vinous, October 31, 2018: pungent herbs, lemon zest, marzipan, green apple, green flowers and green melon; juicy, concentrated and sappy, with a very long, rising finish and oyster-like sea-water salinity; described as not particularly high in acidity.
