Production Details The vines were 30–90 years old. Biodynamically farmed grapes were hand-harvested and sorted through multiple passes, pneumatically pressed, and fermented with indigenous yeasts in 600 L demi-muids for up to six months without malolactic fermentation. The wine then matured for 11 months on fine lees in demi-muids.

Production Details Producer specification: vines were 30–90 years old; grapes were harvested manually in successive passes, slowly pressed pneumatically, and fermented with indigenous yeasts in 620 L demi-muids for up to six months. Malolactic fermentation was not sought. Maturation lasted 6–8 months on total lees in the same vessels. Recommended serving temperature was 11–12°C, and stated aging potential was at least 15–20 years. Importer conflict: Alliance Wine and Polaner instead specify 600 L demi-muids, no malolactic fermentation, and 11 months on fine lees; Alliance additionally says 100% of the wine saw oak and none was new. A SAQ listing titled 2020 reports 12.5% ABV and 9.7 g/L sugar, but explicitly warns that displayed vintage and presentation can vary by received lot, so those values were not generalized into canonical analytical claims.
