Production Details The grapes are hand-picked and selected. Fermentation and maturation take place in large wooden foudres, followed by 11 months on fine lees; the Technical Details state that 100% of the wine was oaked. The page’s broader Montlouis-holdings paragraph reports 30–90-year vines and a 24 hl/ha yield, but does not establish those figures specifically for the Clos Habert parcel, so they are not proposed as canonical vine-age or yield values.
Tasting Notes Green citrus, satsuma and white flowers; off-dry, creamy-textured palate with residual sweetness
Food Pairing Goat cheese, charcuterie, white meats, sweet-and-sour dishes and subtly spicy cuisine
