Production Details Biodynamically managed vineyard with no chemical phytosanitary products. After gentle pressing, indigenous-yeast alcoholic fermentation in 600 L demi-muids can extend over six months; the importer says malolactic fermentation is intentionally avoided and maturation occurs on fine lees in demi-muids.

Production Details Vines were 10–24 years old. Grapes were harvested manually in successive passes and protected in crates before pressing. Alcoholic fermentation could last up to six months; malolactic fermentation was not sought. Maturation on total lees in demi-muids lasted 6–8 months. The vineyard used biodynamic and soil-conservation practices without chemical phytosanitary products. Recommended serving temperature was 11–12°C.
