Production Details Vines are 30–90 years old. Grapes are harvested manually with successive selections and pneumatically pressed; indigenous-yeast fermentation in 600 L demi-muids may last up to six months. Maturation is on fine lees in demi-muids for a reported total of 11 months. The importer also characterizes the wine as barrel fermented and aged in large-format barrels, from biodynamically farmed, dry-farmed estate grapes. Recommended service is 11–13°C, with decanting when young.
