Production Details The Rare Wine Co. technical sheet describes the six Les Lieux-Dits wines, including Sous le Mont, as village-specific mini-soleras. Bottles age five years before disgorgement, while dosage varies by release from 0–4 g/L. Its estate cellar protocol reports primary fermentation in 228 L Burgundy barrels, 400 L fûts and 600 L demi-muids; one year in barrel, with 16% new barrels entering the rotation annually; reserve wine spending one year in foudre before stainless steel; and malolactic fermentation being allowed or not lot by lot. Separately, a label-traced individual bottle disgorged 1 February 2022 had a dosage of 0.5 g/L; those two bottle-specific values must not be generalized to every NVXX release.
Tasting Notes John Gilman, in the 2013 report for a bottle disgorged January 2012: tart orange, quince, smoke, lavender, a light oak note and pronounced soil tones; deep, full-bodied and crisp, with delicate bubbles and a powerful structure.
