Production Details The wine came from three parcels in the Route de Bouze coomb: Route de Bouze (listed as 0.533 ha, planted 1985/86), La Plante (0.218 ha), and Sous Sapins (0.9003 ha, planted 1964/65). The sheet separately reports 1.613 ha total, which does not reconcile with those listed parcel areas. Planting density was 10,000 vines/ha, with massal selection and Guyot training. The vineyard had been farmed organically since 1998 and received ECOCERT approval in 1999; the stated program included biodynamic preparations 500/501 and plant-tea sprays. Fruit was hand-sorted in the vineyard and again at the winery, left uncrushed, and gravity-vatted without added yeast. A five-day cold pre-fermentation maceration at 12–15°C preceded the full maceration, with one pump-over daily until the end of vatting.
