Production Details The source associates the wine with 8.6 hectares and vines aged 20–80 years. Vineyards are cultivated organically; harvest is manual and highly selective; the wine undergoes natural Beaujolais vinification without added SO2 and is matured in neutral barrels.
Tasting Notes For the 2021 release, Véronique Rivest in La Presse (November 2023) describes ripe, crunchy red fruit and floral perfume, followed by a fragrant, bright and lively palate with fine, ripe, light tannins; Les Méchants Raisins (November 2023) characterizes it as peppery, sapid, elegant and full of vitality.
Food Pairing Leg of lamb, small feathered game and cheeses; the November 2023 Véronique Rivest note additionally suggests roast chicken, game birds, sweetbreads, chanterelles and green-vegetable risotto.
