Production Details The 2021 Janins bottling came from a separately bottled 0.20 ha, north-facing parcel in the Janins climat at 450 m, with 80-year-old vines on granitic soil and biodynamic farming (certification underway). The exact-wine profile specifies a two-week ambient-yeast fermentation without punch-downs, a vintage-dependent whole-cluster proportion, and 12 months’ maturation in a 500 L barrel. Bibendum additionally states that no sulfur dioxide is added during vinification; this does not establish that the finished wine is sulfite-free.
