Grape Varieties Pinot Noir and Chardonnay
Region Marc de Bourgogne

Production Details After pressing, the marc comprises grape skins and pips still moistened by white-grape juice or new red wine. It is stored in vats: the sugar-bearing white-grape marc slowly ferments, while the red-grape marc has already completed alcoholic fermentation. In late December or midwinter, the marc is taken to a copper still for distillation. The resulting spirit is matured in barrels in the producer's cellars. The official sheets conflict on the customary maturation examples: the French sheet says 5, 10 or 15 years, whereas the English sheet says 10, 15 or 20 years and specifies French-oak barrels in the historical cellars; therefore no single exact ageing duration is asserted.
Tasting Notes Intense dark amber; aromas of currants or dried fruit, gingerbread, tobacco, vanilla and spices; balanced, round palate with a soft finish and persistent flavours.
Food Pairing Granité or fresh sorbet; may also be used as a cocktail base.
