The healthy crop was hand-sorted in the vineyard and again at the winery, left uncrushed and gravity-vatted without yeast addition. A five-day cold pre-fermentation maceration at 12–15°C preceded a 22-day total maceration with light daily pumping-over, followed by vertical pressing. Maturation comprised 16 months in oak barrels and one month in stainless-steel tank; 20% of the barrels were new, with long, slow toasting and wood sourced from Tronçais and Cîteaux.

Production Details The 0.735 ha, mid-slope parcel was planted in 1901/1902 at 10,000 vines/ha and is Guyot-trained. The healthy crop was hand-sorted in the vineyard and at the winery. Vinification used 100% whole grapes, uncrushed and gravity-vatted, with no yeast addition. A five-day cold pre-fermentation maceration at 12–15°C preceded a 20-day total maceration with light daily pumping-over, followed by vertical pressing. The wine matured for 16 months in oak barrels, 20% new, with long, slow toasting and wood sourced from Tronçais and Cîteaux; all barrels were racked. It was lightly filtered and not fined. The sheet prints February 6, 2022 for magnums and February 7, 2022 for other bottles, but those dates are chronologically inconsistent with both the September 2021 harvest and its stated 16-month maturation, so no canonical bottling-date claim is proposed.
