Production Details Slow spontaneous fermentation and lees maturation took place mostly in used 350 L barrels, without malolactic conversion; the wine was bottled unfiltered and spent at least 48 months sur lattes under natural cork. Low SO2 additions were made at pressing and after alcoholic fermentation; organic yeast and sugar were used for tirage and organic concentrated grape must for dosage. A dosage discrepancy is retained: the distributor’s release sheet gives 3 g/L, while the producer page’s Antonio Galloni review gives 3.3 g/L for the reviewed release; both place disgorgement in July 2023.
Tasting Notes Antonio Galloni: powerful and expressive, with kirsch, mint, cedar, tobacco, savory wild notes and resonant supporting structure.
