Production Details Producer specification: the predominantly Savagnin material is fully destemmed and fermented in boxes; red-grape skins, seeds and pulp recovered after devatting at the end of pressing are also used. The marc undergoes double Cognac-style distillation, then matures in 228 L oak casks for several years, losing at least 1° of alcohol annually. Several vintages are assembled. Sager and Wine instead describes Poulsard marc aged seven years in oak; this conflicts with the current producer's predominant-Savagnin and nonspecific 'several years' specification and is retained as a source conflict rather than normalized into the producer facts.
Tasting Notes Golden yellow with amber reflections; spice, walnut, undergrowth, gentian and vanilla aromas; as it warms in the glass, candied-fruit, dried-fruit and brioche notes emerge.
Food Pairing Digestif; haute cuisine; chocolate; sorbet; cocktails
