Production Details The importer’s 2016 vintage book says all wines were aged entirely on their lees, received gentle bâtonnage a few times per month according to vintage, and were not racked during this period. The naturally cool, humid cellar delayed malolactic fermentation; naturally produced CO2 permitted low SO2 use. Bottling was by hand under gravity after a full moon, without fining, filtration or an addition of sulphur at bottling. For Les Vaucrains specifically, the source describes a 15-acre vineyard lying upslope at 260–280 meters in southern Prémeaux.
Tasting Notes Vinous: black fruits, violet, blackberry, black cherry, bitter chocolate and strong mineral energy, finishing long and firmly tannic. Burghound: earth, game, smoke and fresh black currant, with rich, powerful flavors, sappy dry extract, minerality and a firmly structured, rustic, austere finish.
