Production Details The vintage-specific sheet describes maturation for around two years on the lees. The wine is not moved during maturation and is bottled without filtration or fining, with only a minimal sulfur dose. Retained carbon dioxide may remain, so vigorous decanting is recommended.
Tasting Notes Wine Spectator: black cherry, blackberry, violet, vanilla and toasty oak, with dense texture, firm structure and an iron-tinged finish. Burghound: sandalwood, hoisin, soy and dark berries, followed by fresh, succulent, powerful flavors and a compact, dusty finish.

Production Details Aged entirely on the lees with gentle bâtonnage a few times per month, adjusted to the vintage, and no racking during maturation. The cool cellar delays malolactic fermentation until late summer. Bottling is performed by hand using gravity after a full moon, without fining, filtration or additional sulfur at bottling; retained carbon dioxide makes decanting advisable.
Tasting Notes Vinous described black cherry, licorice, menthol and dark chocolate, with red and black fruit, fine-grained firm tannins, cocoa powder and violet. Burghound noted reduction and spice, followed by rich, full-bodied flavors, abundant dry extract and a persistent balanced finish.
