Production Details One to two pump-overs were performed daily, with punch-down only at the end of alcoholic fermentation, followed by 10 days of post-fermentation maceration. After malolactic fermentation, the wine matured for 17 months in barrels, 30% new, and was bottled without filtration or fining.
