Production Details At the critic’s February visit, none of the 2009 whites had been racked and no SO2 had yet been added. The wines retained noticeable residual CO2 and decanting was recommended. These are in-elevage observations, not finished-bottle sulfite measurements.
Tasting Notes Perfumed acacia blossom and citrus aromas with lactic hints; rich and unexpectedly powerful, with substantial dry extract and a lemony, explosive finish.

Production Details For the 2008 white lineup, sulfur use was very limited overall, with some wines receiving none; after early malolactic fermentation, the wines were left to develop without intervention. The wines retained noticeable residual CO2 and decanting was recommended. The source does not establish whether Les Enseignères belonged to the zero-sulfur subset.
Tasting Notes Floral and lemon-lime aromas; detailed, intense and sappy, with a lingering finish and a toasted-bread note.
