Production Details The sheet reports cold pre-fermentation maceration at 10–12°C, followed by one week of fermentation with daily punch-downs and light pump-overs. The wine settled overnight in stainless steel, underwent malolactic fermentation mainly in winter and received one racking. Its wine specification gives 16 months in French oak, with 40–50% new and 50–60% once-used barrels. The parcel is 0.99 hectares with plantings from 1945, 1967, 1968, 1986 and 1993. A separate Bourgogne-wide vintage overview—not a parcel-specific harvest record—places harvest between September 26 and October 7.
