Production Details Moderate extraction; no sulfur added during vinification; barrel maturation for 12 months with very little new oak and no racking; each cru assembled in vat before bottling; no fining, with filtration described as very rare. The sheet lists the method as organic but names no certification body. The importer’s estate-wide 2023 note reports harvest from 4–11 September, vinification across 12 days, no sulfur until after an early malolactic fermentation, and 20% whole-bunch vinification from Aux Etelois upward. It gives an estate alcohol range of 12.5–13%, but does not isolate this cuvée’s exact picking date or alcohol.
Tasting Notes Jasper Morris, tasted November 2024: mid-purple; ripe, sensual red and black fruit; fine rather than highly concentrated.
Food Pairing Game, rib steak, lamb, pikeperch or tuna fillet in red-wine sauce, and strong cow’s-milk cheeses
