Production Details The exact-wine sheet describes the Le Moine protocol as approximately two years of maturation on the lees without moving the wine, followed by bottling without filtration or fining and with only a minimal sulfur dose. Residual carbon dioxide commonly remains, and Mounir Saouma recommends energetic decanting.
Tasting Notes Burghound's producer-hosted 2024 barrel review describes cool red currant, anise, earth and broad spice aromas, followed by fleshy, powerful flavors with apparent minerality and a balanced, youthfully austere finish.

Production Details At Burghound's February barrel visit, the wines had neither been racked nor sulfured, and Saouma said the 2017 reds had been left in cask completely untouched. Noticeable retained carbon dioxide led to a recommendation to decant the wines.
Tasting Notes Burghound's 2017 barrel review describes a cool, high-toned nose of red currant, raspberry, lavender and violet, with refined flavors, fine but dense tannins and a dusty, slightly bitter finish.

Production Details The importer dossier describes aging entirely on the lees, gentle bâtonnage a few times monthly and no racking during that process. The cool cellar delays malolactic fermentation; after malolactic completion, bottling is performed by hand using gravity, without fining, filtration or sulfur addition at bottling. At Stephen Tanzer's January 2018 review, none of the 2016 wines had been racked, the wines were very low in sulfur, and several reds had not yet begun malolactic fermentation.
Tasting Notes Vinous described cherry, raspberry, flint and tobacco lifted by white pepper and rose petal, with silky texture, red fruit, mineral tension and fine-grained tannins. Burghound described cassis, plum, black cherry and a sauvage nuance, followed by powerful, polished and mineral-driven flavors with a firm, youthfully austere finish.
