Production Details Robert Rolls’ listing of the 2020 Pucelles describes the domaine’s Premier Cru method as 20–30% new oak, minimal bâtonnage and none after malolactic fermentation. After pressing, the juice settles for 24 hours, is racked into barrel for fermentation, then racked once more before bottling with light filtration. Best of Wines gives compatible but more specific vendor guidance: 25% lightly toasted new oak, whole-cluster pressing, barrel fermentation, maturation on fine lees, minimal lees stirring during fermentation and none during maturation; recommended serving temperature is 12–14°C.
Tasting Notes Wine Advocate: pear, orange oil, baking spice, green apple, pastry cream and a saline finish. Burghound: honeysuckle, passion fruit, tea and poached pear. Jasper Morris: bright colour, restrained white-fruit character and sufficient acidity.
Food Pairing Creamed Bresse chicken; butter-sautéed lobster; pan-seared scallops with cauliflower purée; aged Comté.

Production Details The contemporaneous domaine tasting report records approximately 35% oak for Les Pucelles versus about 20% for the preceding Premier Crus; it does not specify whether the percentage denotes new oak.
Tasting Notes Burgundy Report, tasted 8 October 2020: concentrated and mouth-filling, with a lightly tannic texture, balance, restrained complexity and persistent density in the finish; recommended for cellaring or decanting.
