Production Details Fruit came from the steep Les Perrières climat in Aloxe-Corton, at approximately 273 metres, from vines approximately 45 years old; vineyard management used no synthetic herbicides. Grapes were hand-harvested and rigorously sorted, lightly crushed and destemmed, then cold-macerated before indigenous-yeast fermentation in stainless steel with gentle punching down and pumping over. After gentle pressing, maturation occurred on fine lees in French oak, 30% new, for 14–15 months. The barrels were assembled in tank one month before bottling under the lunar calendar. Recommended serving temperature is 14–16°C.
Tasting Notes Deep ruby with garnet nuances; blackcurrant, blackberry, wet stone and earth; concentrated, round and supple, with refined tannins, pronounced minerality and a clean finish.
Food Pairing Beef bourguignon, hare stew, roasted pheasant or wild boar, and mature Époisses, Comté or Cantal.
