Production Details The 2013 whites were not racked, and their lees were stirred only three times. No SO2 had yet been added at the critic's February visit. The producer described an oxidative, non-interventionist élevage intended to let oxidizable material precipitate naturally rather than be removed through fining or filtration. La Pièce Sous Le Bois was a first-year offering in 2013. Because the whites are bottled with elevated dissolved CO2, the producer recommends decanting and considers at least ten years of bottle age necessary for readiness.
Tasting Notes Burghound described citrus, white flowers, green apple and wet stone, followed by a light, racy and mineral palate with a saline, long finish and a smoky accent. Stephen Tanzer separately described lime blossom and crushed-stone aromas, tightly wound underripe pineapple and lemon flavors, strong mineral tension, and an energetic, stony finish.
