Production Details La Fosse comprises three distinct, sunny, early-ripening parcels near the village, planted in 1973. The grapes were hand-harvested and underwent a one-week cold maceration before indigenous-yeast fermentation. Maturation comprised 12 months in French oak barrels, one-third new, followed by six months in tank; the wine was bottled unfined and unfiltered, with work following the lunar cycle.
