Production Details Matured for 11 months in barrel on fine lees, followed by another 8 months in barrel after racking; fined and bottled barrel by barrel with a two-spouted chèvre.
Tasting Notes When tasted in 2006: citrus and orange; crystalline pale-yellow appearance; toasted, spicy, slightly exotic and floral aromas; incisive attack, substantial yet light-textured mid-palate, and an exceptionally long, energetic finish.
Food Pairing Firm-fleshed fish such as sole, sea bass, John Dory, cod, salmon, Arctic char or trout; white meats including poultry, veal and sweetbreads; mature strongly flavored cheeses; hard cheeses such as Cantal, Tomme, Comté and Salers.
