Production Details The 0.735 ha mid-slope parcel was planted in 1901 and 1902 at 10,000 vines/ha and uses massal selection and Guyot training. It has been farmed organically since 1998 and biodynamically since the 2001 campaign. The healthy 2016 crop was hand-sorted in the vineyard and again at the winery. Vinification used 100% whole, uncrushed grapes, gravity vatting, and a five-day pre-fermentation cold maceration at 12–15°C, followed by daily punching down until mid-fermentation and light daily pumping over through the end of maceration. The wine matured for 14 months in oak barrels, 43% new, with long, slow toasting and wood sourced from Tronçais and Cîteaux; every barrel was racked.
