Production Details Following severe sorting, the Pinot Noir was vinified as whole bunches. The wine’s stated method uses whole grapes except in frost- or hail-affected years, truncated wooden vats, no pumps and no sulphite additions during vinification. Maturation lasts 15–18 months in the estate’s Cistercian cellars, with 85% in barrels that have held several wines and 15% in new barrels. Horses and a caterpillar tracker are used in the parcels, with no tractors entering them.
Tasting Notes Surprising freshness and typicity despite the very warm vintage
