2018 Technical Specifications
Region Les Hauts Doix
Production Details At the reported 2018 barrel tasting, the cuvées were still in barrel, unracked and without sulfur at that stage. Saouma described deliberately interrupting malolactic conversion to prolong fermentation and slow maturation, while retaining about 6 L of lees per barrel. Across the purchased Côte d’Or parcels, harvest began August 20 and final picking occurred September 18; those dates describe the broader 2018 range and are not vineyard-specific Les Hauts Doix harvest dates.
Tasting Notes Wine Spectator barrel assessment: linear, pure and fine, bursting with violet, raspberry and wild-cherry flavors.
