Production Details The 0.3275-ha, steepish-slope parcel was farmed organically and biodynamically. Fruit was hand-sorted, left uncrushed and gravity-vatted. A five-day cold pre-fermentation maceration at 12–15°C preceded the 18-day maceration, with daily punching-down until mid-fermentation and light daily pumping-over thereafter. Élevage comprised 15 months in barrel followed by one month in stainless steel.
