Production Details The 2023 white release was planned for bottling around November 2025, approximately 27 months after harvest. The long élevage used no added protection and was intended to let oxidizable material oxidize and precipitate naturally rather than be removed through fining or filtration. At the Burghound tasting, the wines had completed malolactic fermentation but had not subsequently been racked; many retained substantial dissolved gas. The whites were intended to be bottled with elevated CO2, reported approximately as “1000 mm” in the source, and the producer recommended decanting.
Tasting Notes Burghound’s pre-bottling 2023 review found firm reduction on the nose; fresh, vibrant, very rich and opulent medium-bodied flavors; a caressing yet punchy texture; and a lingering citrus-tinged finish.
