Production Details Hand-harvested, organically farmed Chardonnay from a rare mid-slope, village-classified section of Folatières surrounded by Premier Cru vines. The east- and southeast-facing vines are more than 40 years old. Indigenous-yeast fermentation was followed by 12 months in 456 L oak barrels with approximately 50% new wood and 8 months in stainless steel; bottling was without fining or filtration. Recommended serving temperature is 11–13°C, and light decanting for 30–45 minutes may benefit the wine in its youth.
Tasting Notes Pale yellow with green or golden highlights; acacia, hawthorn, peach, pear, hazelnut, fresh butter and light toast; lively, energetic, full yet airy, with saline tension, chalky minerality and a persistent fresh finish.
Food Pairing Roasted turbot, sea bass with beurre blanc, shellfish, seafood risotto, roast poultry with a light cream sauce, aged Comté or summer Beaufort.
