2016 Technical Specifications

Region Les Folatieres
Unfined Yes
Unfiltered Yes
Production Details The house method presented in the 2016-vintage brochure comprised complete lees aging, gentle bâtonnage a few times per month according to the vintage, and no racking during that process. The cool, humid cellar delayed malolactic fermentation; finished wines were bottled by hand using gravity after a full moon, without fining, filtration or sulfur addition at bottling. This is an all-wines method statement in the vintage brochure rather than a target-only specification.
Tasting Notes Stephen Tanzer barrel review: yellow fruit, stony spring-water minerality, thick but precise texture, very dry and salty finish, strong dry extract and floral lift.

2013 Technical Specifications

Drinking Window 2019+
Region Les Folatieres
Production Details At the February barrel tasting, the 2013 whites had not been racked, their lees had been stirred three times in total, and no SO2 had yet been added. The target Folatières came from vines described as approximately 100 years old.
Tasting Notes Burghound barrel review: acacia blossom, pear, apple and soft oak; seductively textured, with natural sweetness moderated by salinity and a mineral-tinged finish.
