Production Details The exact-wine trade page describes sustainable farming, hand harvesting, native-yeast fermentation and maturation for 12 months in barrel followed by 6 months in tank; it also describes approximately 50-year-old vines in the highest section of Les Folatières below La Truffière. For the domaine's 2023 whites, a contemporary merchant report records four-hour pressing to obtain high-quality lees, transfer of as much of those lees as possible to barrel, and minimal lees stirring during barrel fermentation. Latimer reports temperature-controlled grape transport and overnight cooling before pressing. Vinmonopolet reports residual sugar below 3 g/L and acidity of 6.9 g/L, but does not specify the acidity's analytical basis, so neither figure is promoted to an exact canonical sugar or total-acidity value.
Tasting Notes Vinmonopolet: mineral aroma, lime, integrated oak and young fruit; fresh, concentrated palate with lime, pronounced flint and toast, and a long finish. Argaux: flinty minerality, bright orchard fruit, fresh herbs, white flowers and white pepper. Vinous review dated 9 January 2025, scored 93–95: mineral-driven, yellow flowers, lemon verbena, chamomile and orchard fruit, with balanced acidity and a focused finish.
Food Pairing Shellfish, fish and light meat; Argaux additionally suggests vegetarian dishes, seafood, and pizza or pasta.
