Production Details For the 2008 white-wine range, élevage was considered critical; sulfur use was very limited and some wines received none, but the source does not identify the sulfur treatment of Les Chevalières specifically. The wines were left undisturbed after early malolactic fermentation and were worked with their lees. Noticeable residual carbon dioxide was retained, and decanting was recommended. Burghound assessed this wine from barrel at 88–91 points.
