Production Details Fruit came from the Chardonnay portion of two adjoining En Rettin parcels acquired in 2022; the vines were approximately 35 years old and organically managed. Grapes were hand-harvested and gently whole-cluster pressed, followed by spontaneous indigenous-yeast fermentation. The wine then received 34 months of topped-up, non-oxidative maturation in previously used barrels and demi-muids, with no new oak.
Tasting Notes Bright gold with green highlights; saline and iodine-like minerality, oyster shell and samphire, lemon zest, clementine, pear, quince and physalis, with cumin, liquorice and nutmeg. The palate is vivid and straight, enveloping but dry, lightly tannic, and finishes long and saline.
Food Pairing Cockles or clams with parsley and coconut-milk broth; roasted cod with glazed golden turnips and a white-miso-and-wasabi cream sauce.
