Production Details Manually harvested, with sorting in the vineyard and on a sorting table; an optical sorter may be used in some years. The fruit was lightly crushed and destemmed into stainless-steel vats, with a small whole-cluster portion possible depending on fruit condition. A cold maceration of a few days preceded temperature-controlled fermentation with pumpovers and/or punchdowns. After pneumatic pressing, the wine matured for 15 months in barrels, approximately 30% new wood, with malolactic fermentation occurring during maturation. The barrels were blended in vat one month before bottling; the wine was not fined, received light lenticular filtration, and was bottled according to the lunar calendar.
Tasting Notes Dark red; intense blackcurrant; marked acidity and astringency, with softness emerging after maturation. Robert Parker's Wine Advocate additionally described sweet cherries, berries, rose petals and spices, an ample, fleshy and seamless palate, bright acidity, powdery tannins and an elegant profile.
Food Pairing Fine red meats, game birds, red-wine sauces—including mildly spicy preparations—and mature, strongly flavored cheeses
