Production Details The site is at 250–330 metres. Millesima states that acquisition occurs after maceration and fermentation. The wine is aged on full lees without racking, with gentle, regular bâtonnage, in bespoke fine-grained Jupilles-oak barrels slowly toasted over charcoal. It is bottled by gravity after the full moon while retaining natural carbon dioxide from deliberately delayed malolactic fermentation. Recommended service is 16–17°C after decanting for several minutes to several hours; approximate cellar potential is 20–30 years.
Tasting Notes Millesima describes a deep ruby colour; blackberry, cherry and liquorice aromas; a full-bodied, generous palate with pronounced minerality, fine but firm tannins and a long finish.
