Production Details The approximately 300-meter-elevation, east-facing hillside parcel covers 0.497 ha, was planted in 1951–1952, has 10,000 vines/ha and uses 100% massal selection. Fruit was sorted in the vineyard and winery; 10% was retained as whole clusters, with the remainder destemmed and gravity-fed to vat. A five-day cold pre-fermentation maceration at 12–15°C preceded a 23-day total maceration, with two punchdowns and one light pump-over daily through the end of vatting. Maturation comprised 15 months in barrels, 20% new, followed by one month in stainless steel; barrel wood came from Cîteaux and Tronçais and received slow, light toasting. The wine was lightly filtered without fining.
