Production Details Fruit came from a 0.38 ha monopole parcel. After long pressing, the must was matured in 600 L demi-muids with very little new wood, followed by several months in tank before bottling. Recommended serving range is 12–14°C.
Tasting Notes Pale yellow with silver highlights; white flowers, candied lemon, pear and chalk; taut, precise and mineral with a long, fresh finish.
Food Pairing Turbot, sole, John Dory, lobster, roasted langoustines, cream-sauced poultry, white-truffle risotto, Comté, Beaufort or ash-coated goat cheese
